Berry Beet Smoothie

I had some leftover beets from my latest stint “juicing”. Juicing is fun and pretty tasty but I think its sort of a cop out to good health. When your juicing your losing all/ most of the fiber from fruits and veggies and its packed with sugar. Juicing is great for adjusting to the taste of veggies (hello carrot juice) so the smoothie is kind of a step up from that… taste & texture! This smoothie is a bit spicy but its a great kick in the pants to get your day going; I make it for a mid-morning snack!

 

Ingredients

  • Beets (about 3oz)
  • 1 Orange, peeled & quartered
  • Water
  • Frozen berries

Directions

  1. Blend beets, orange, and water together- pulsing will probably be necessary 
  2. Add frozen berries and puree until desired consistency is reached

Tips

  • Add a sprinkle of Stevia if you need a bit of sweetness to counteract its bite!
  • Rinse your teeth immediately when you finish… don’t brush them until after you have rinsed to avoid erosion
  • substitute almond milk for water… I just never have any around
