Banana Chocolate-Chip Oatmeal Cookies

I have been craving cookies lately and these end up being the perfect fix! I get a guilt free indulgence that is quick and easy to make- plus it helps me get rid of over ripe bananas I can never seem to figure out what to do with!

  • 2                    Ripe Bananas
  • 1/2 cup        Instant Oatmeal
  • 1 oz               Dark Chocolate (chips or shavings) at least 75% coca
  • 3 Tbs            Chia Seeds [optional]
  • 1 tsp              Bee Polin [optional]

  1. Pre-Heat oven to 375F for crispy or 350F for chewy cookies
  2. In a medium sized bowl mash bananas into a chunky semi-smooth consistency. Fold in oatmeal, dark chocolate, chia seeds, and bee polin. Mix well.
  3. Place 1.5 inch balls of dough onto a greased cookie sheet
  4. Bake 15-20 minutes until cookies are desired texture

Banana Oatmeal Cookies

  • Store at room temperature in an air-tight container (no clue how long they last… I usually eat them within a day or two)
  • I prefer crispy cookies so I bake my cookies for 15 minutes at 375F
  • Don’t be afraid to over indulge on these a little or to have them for breakfast- think about it- its just some bananas, oatmeal, and some dark chocolate!
